Rustic Cocoa was our first masterpiece on the chocolate journey. Using our cacao nib 1/80 roasting ratio, we incorporate our naturally imported cacao beans directly into the coffee roasting process. Using this method overcooks the nibs, but we get to use these later in our Chocolate Tea. We then put the beans with our chocolate extract for 6 hours, use our special CoffeeZyme drying method then dust the final product with our homemade cocoa.
